Maastricht University Medical Centre coordinates European PHYTOME project

Investigation into replacement of nitrite in meat products by natural compounds

MAASTRICHT, January, 8, 2013 – The European PHYTOME project (Phytochemicals to reduce nitrite in meat products), that has started the first of December 2012, aims to develop innovative meat products in which the food additive nitrite has been replaced by natural compounds originating from fruits and vegetables. These biologically active compounds, also referred to as phytochemicals, are known to contribute to improved gut health and are added to the meat as natural extracts. Dr. Theo de Kok of the department of Toxicogenomics of the Maastricht University Medical Centre, is the coordinator of the project.
